One lovely summer morning, I was sitting on my deck, enjoying a cup of coffee and the luxury of not having to go anywhere or do anything on this particular day. Or so I thought! Mere moments after I'd settled into my favorite hammock, listening to the birds do their morning thing and watching the horses graze, my boyfriend burst outside in a bit of a panic. What? What's going on? He asked if I'd made anything for the potluck we were to attend in an hour and why he couldn't find it in the fridge. What potluck? Did I know about this? He went on and on about how he'd told me on Tuesday and how important it was because there were to be several potential clients there and we just HAD TO go. Sheesh! So much for a leisurely day.
I promptly went to the kitchen to see what I had to whip something up and calm his frayed nerves. Sadly, I'd not been to the grocery store in the past week and supplies were a bit low. Opening the freezer, fridge and cupboards, I began surveying my options. And this is what I came up with:
Tortellini Surprise
1 pkg. fresh tortellini (I like the cheese filled, but it's your call)
1 can mandarin oranges
1 lb. fresh asparagus
1 can string beets
1 jar marinated artichoke hearts
pine nuts or sesame seeds
tarragon vinegar
olive oil
Italian seasoning
Boil the tortellini until al dente (firm). Strain and put in large bowl. Coat tortellini with a small amount of olive oil (to prevent sticking). Steam asparagus (don't overcook. it should be crunchy), cut artichoke hearts into small pieces. Drain mandarin oranges, but be sure to save the juice for dressing.
Put all ingredients into bowl with tortellini and toss.
Dressing:
Oil from artichokes
tarragon vinegar
mandarin orange juice
Italian seasoning
Use your palate to judge. I prefer a tart dressing, so I use more vinegar. But this is entirely up to you. Pour half of the dressing into bowl and toss. Save remainder to redress when you arrive at the potluck (or when you're ready to serve). Can be served hot or cold. Serves 4. (adjust quantities to accommodate your head count)
You can also add things like Genoa salami or chunks of ham. You an also substitute another green veggie (like broccoli) for the asparagus. Use your imagination! Really, you could use whatever you like. Get creative and use lots of colorful foods to make it more festive (and YUMMY!) Bon apetit!
